It means she didn’t feel the spark or the sexual tension in the date hence why she calls you a “nice guy”.
You probably didn’t hit on her during the date, you didn’t make her blush at all, you did not make things physical, you didn’t even escalate, so you played it too safe which leads to her saying “you are a nice guy” that she will never date
Being called a nice guy isn’t actually good. She is not saying that you are a morally correct person, what she is saying is that you are a beta male in women language.
Then your hot tub proposition is way too random and out of place, with a girl you haven’t even kissed first

It’s about flirting. You let a girl know that you are into her by flirting not by having a serious talk about your deep feelings or how much you want to have something serious with her.
Flirting is saying things like: “Damn you are cute and sexy” “the way you smile at me is making me wanna take you out” “you are so cute and charming, that you are making me go crazy”…
You do this while also biting your lip in a sexually suggestive way; looking her up and down, and while you play with her hands and look at her lips… If she is comfortable about this behaviour and doesn’t pull away then you go for a kiss.
You also need to make touch part of the way you communicate with her to remove the physical barrier… So you need to high five her more often, push her around on purpose in a playful way, touch her arm casually but on purpose when you say something to her, and gradually make the touch more intimate when you start flirting by caressing her hands and going for a kiss if she lets herself be caressed like that.
Also to avoid nice guy behaviour, don’t act like you are a good supportive friend.
If she is treating you like her shoulder to cry on, telling you about her problems, or her depression or her ex… that’s not good. It’s usually what leads guys ti getting friendzoned.
You need to tease her about it. Be like:
“You totally made your ex nuts, that’s why he run away” or “yeah you left him traumatised, poor guy,” “What did you do to him huh? I bet you were so evil to him that he almost asked for a restraining order” “blah blah blah, you girls are crazy”
In other words, don’t take her side, don’t be a “good friend”, don’t be a “mister nice guy”, don’t support her emotionally,… Just dont. That’s not your role here, that’s the kind of role that gets you friendzoned.
That behaviour of “i care so much about you, let me show you” always comes across as platonic behaviour and causes her to think of you as a “really nice friend” that she will never want to fuck.
And avoid having objective conversation about boring things, instead surprise her, be more witty, be more playful, joke more, roast her,…

Just respond that you enjoyed yourself and thank her for a good time. She’ll text you in a few weeks when she’s hot and bothered. If she doesn’t, then at least you didn’t waste anymore time.

Was the first date pretty physical and suggestive?
If not, talking about the hot tub was overly aggressive. Most women are careful about expectations early on. She might fuck you on the second date, but she probably doesn't want it expected. And hot tubs have a way of creating that expectation.
Also, it's not unusual for things to flame out after a first date. She probably would have declined no matter what activities you suggested. That's just how it goes most of the time.
