It affects her take home pay how much her customers think she likes them. Read into that what you will.

Also, her getting a job at a place that only hires hot staff shows major low value. Something to remember when thinking about approaching her.

Build tension and don't beat around the bush. Cocky and Funny works well, but you are going to have to close soon. Qualify her and close.

Honestly bro, you probably blew it when she approached you and you were too in your head to pick up on her IOI and go for it. But do it anyway you never know.

I became frequent at a sushi bar in college town. My goal was more to make the bar my "home turf" than flirt with any waitress, but I'd imagine these same ideas would work for you.

Get to know EVERYONE that works at the bar. More than likely their is a protective cook/bouncer/bartender thats not necessarily protective and not dating her because he's a beta, just likes to protect his staff. If he exist and you befriend him, things will go a lot smoother.
Respect her craft. If she likes what she does she'll be thrilled to help you decide what you want to eat. Have her suggest things then maker her eat them with you. If you don't like something then instead of lieing about it neg on her about her "horrible taste"
Do things that count as both her working and hanging out with her. Order something that is easily shared and offer her pieces.
Tip a precise percentage every time, tip big, but you have to tip. Even if its not her serving. I might even say especially if its not her serving. Her co-workers are more likely to let her goof off with you if they like you during her hours.
Don't forget the standards. Your independent, self satisfying and all that jazz still applies. If you go there around lunch and she isn't there, don't walk off like your entire lunch plan was to see her. Stay and eat and chat up another waitress without making it seem like your a player.

She will be concerned with her inherent quality. The more you 'do your own thing' and seem unconcerned with her the better you will do. Start there.

No, really. Don't bother closing unless you might be better looking than her. If not, you'd better be good at believing you are.

See if she likes you funny. Build curiosity. Only look at her occasionally.
