I don't know if I would call it a shit test, cause the girl isn't really actively doing anything to see how you react. It's more or less society's shit test, or the result of fear of rejection. Then again, I guess it could be a shit test that you give to yourself, if you would like to see it in that light. The initial thought of most (AFC) men who are about to open a girl goes something like,

"Dude, you're not good enough for her. Look at her, she is a solid 10, and you can't even talk to a 6 without tripping up. You can't do this. You're going to fail."

So I guess, in a way, you're testing yourself. But then again, something like this would be more of a negative thought rather than a shit test.

Somewhat, I'd say. Plus girls are just terrified of rejection.

I've often deployed the Neil Strauss tactic for learning by asking girls "When did you first realize you were attracted to me?" after we've already banged. Lot of the time, the response is "You were so bold, you just walked right up to me."

Being able to approach itself is the attractive thing.

Yes. It might seem like they're just passive and that's how things worked out, but a (female) friend of mine told me recently that she's no longer going to approach men (even if they seem interested in her) because she's tired of getting beta men. She wants alphas. By deliberately being passive, she will end up with men who are brave enough to approach (which tends to be a more alpha trait).
