this is not what you would categorize as “easy”

There are two likely reasons here.

She does want to see you and is legitimately busy

or

She's going on dates with other guys and is pushing your schedule down the calendar in case things don't work out with them

If she completely blows it off with you, it was because of reason two.

You need to have the attitude of, "I'm going out to have fun. You're free to join, but if not, I'm still going out and I'll have fun without you, it's your loss."

I asked a woman to meet me on the weekend, but she said no because she was busy at home, cleaning etc. On the weekend, I still went out and took a picture of a liquor bottle in a bar, then sent her a text saying, "This is what you missed." During the week I sent her a picture with ice-cream and pizza. The next week, I asked her out again, and this time she didn't say no..... She saw that whether she came with me or not, I would still go out, I still have a life.

Do the same. If she's not interested after 2-3 tries, at least you'll have the answer you need.
