I try to. We did go out for our 5th anniversary a couple weeks ago and the night more or less went like yours did, which was pretty great. Since her anxiety is social, it is tough to do things like that. On top of something like that being a massive deviation for her compass, she really doesn't like being away from the kids. So anything spontaneous like that would send her into a spiral of worry. Did she pump enough milk for the baby, when was the last time he ate, etc.
I have a job interview later today though. The goal is for her to be able to quit her job soon, and this job should pay enough to make that transition. I have pretty good inside info from past coworkers that have gone over to this company that the boss is very interested in me, so am pretty confident going in. I think getting her to be able to SAHM will be huge for her hamster in general, not just for me and my goals.

Thank you. It really is all becoming clearer. Things like, we go to my grandfather's cottage on the lake almost every Sunday around the same time, but she will still ask me that morning what time we're going. I get annoyed, because to me the answer is "uh well, around the same time we always do" when she really just wants me to lay out the plan to settle her anxiety. I feel like I shouldn't have to go through every minute detail to her, but the reality is that until she can feel at ease, and part of her feeling at ease is knowing that I have shit handled, she is going to stress and I do need to go through the details. Reality is that it's just my own hamster at work. Why the fuck don't I just say "probably around 2 o clock babe," like how hard was that??

Yeah this is helpful. I need to get better at being witty and playful. I never even thought of it as a means for her to release that anxious tension.

Alright, my first thought? Yes, she has anxiety but it seems as if you get wrapped up in it too.
You need to learn to be The Oak. Never too high, never too low, emotionally stoic. When she sees this is in you she may feel less anxious.
My wife has anxiety. I stopped getting butthurt about rejections, which just doesn't happen anymore, and I don't let her know if I'm stressing or worried. I don't complain about my job, I don't complain about her family. I don't get upset if she didn't do shit all day but sit with the kids...
I used to overreact to all of that and more. And it absolutely had a negative impact on my marriage. But I slowly got the grasp of not getting worked up, and yes I've had a couple slips but ultimately she sees me as the oak that she can cling to during the storm.
That's where you need to be. No more butthurt after rejection, no more talking about feelings, just... be cool man. If something's bothering you, don't get all worked up.
Anyway, that's just what I see and I figured I'd share my thoughts.
Tl;Dr
My wife was anxious because I was anxious. I stopped being anxious and so did she.

I think you are right. This is ultimately what I need to work on beyond just physically getting my shit together. I have always let her emotions get me worked up. I have been working on STFU, but not hard enough.
