Context, boy. Where I am and the situation will cause me to start off differently. For example there is a high school near my gym so if I start a conversation it goes like this:

Me:Hey

Her:hey

Me: How old are you

Be genuinely curious about the girl you’re interested in. That should be your mindset. There’s always something about her that can lead to a line of inquiry. The activity she’s currently doing. Her hair. An article of clothing she’s wearing. Her opinion on a current issue in the news. Where she’s headed to. What is the best coffee shop in town.

The key is to not fake interest, but to actually be interested in her response and really listen. So, I’ll give an example that could apply to almost any girl. Ask her, “I’ve always been curious how a girl decides to go with short hair versus longer hair.” If she has short hair she can explain why she wears her hair short, and if she has long hair she can explain why she likes it long. Actually listen to what she says and be curious about it, and then relate it back to something about yourself.

The impression that the girl should get from your initial approach is not that you’re trying to pick her up, but instead that you’re a guy who was genuinely curious about something that she’s helping you with. And then, because she’s such an interesting person and in the course of the conversation you realize, wow, this girl is really attractive and I’d like to see her again. Girls put up a natural defense to a guy trying to pick them up in nontraditional locations. But they are hopeless romantics when it comes to perceived random encounters. If you come at a girl with a pickup line in a grocery store, she’s going to pull back hard. If you and that same girl happen to reach for a can of beans at the same time, and that leads to a conversation where you realize she’s attractive and you want to be with her, she’ll be way more receptive to that.

The problem isnt that you can't think of anything to say, the problem is that you think that what you have to say isn't any good(not true). Someone gave me a good piece of advice awhile ago, the best way to contribute to a conversation is to simply let people in on what you're thinking.

I’m the same way and don’t know why. I can start a conversation about bullshit with anyone but as soon as a girl gives IOI or I find her attractive, I freeze

Always have a statement that can end with a question is how i start a convo with a girl. So they can answer back to. Just think about it like this. What would you like people to come up to you and tell you and go off those examples.

Re-read your own post. You’re framing the whole situation as “I can’t”, probably because of a very small number of failures you experienced. Then you conclude that there must be some natural talent involved and that only certain people magically know how to start conversations.
