One of my coworkers pursued me, and I think he is attractive, so he asked me out on a date after he gave me his number.

Our first date went well, and so did the second. On our second date, I made sure to tell him that if his intention was to hit it and quit it, that I would prefer to cut things off. My heart has been broken by a co-worker before, and it is awful to see that person at work. I told him that I liked him, but that I refused to be emotionally screwed over. He responded by telling me that he liked me too and that every good relationship starts off as a solid friendship, and that we should build up to that. He told me that this was only the second time we had gone out, and to give it time. He told me that we could be "modified friends" and that we would talk about it when we "get to that bridge and cross it". He also told me that he rather not sleep with me until much later, since it complicates things.

Does this sound promising? For some reason, it bothers me that he only asks me out on dates on weekdays and that I don't hear from him on the weekends at all. I'm starting to think that maybe I'm a side piece? I'm truly "old-fashioned" and I don't initiate contact. How should I proceed?
