I ran over something while dropping my husband off of work and got something stuck in my tire. His coworker helped us out, and I decided to make him some muffins as a Thank-You

Banana Crumb Muffins

I'm incredibly blessed with a husband who can eat the same thing every day for weeks and never get tired of it! So, every Sunday, I make a big pot of Chile Verde and divide it up with some homemade Spanish rice and (canned) refried beans for his lunches for the week.

My husband was out of the country on business all last week, so it really felt good to get back into my swing and making his lunches. I love making sure he has a nice, homecooked lunch everyday, since it's difficult for him to go out for lunch.

I lost 10 pounds! I cooked many delicious meals! This is a pasta that I toasted in butter before cooking. It was freaking heavenly. My man and I had sex 4-5 times this week, which is an awesome amount. I blew his mind with extra fun, spontaneous sex. I got the bathroom, kitchen, and bedroom cleaned. I also worked 40 hours on top of it all!

Bonus recipe!

Penne noodles, browned in butter. It will take 20 minutes or so. I like to toss in diced onions and brown them, too. After the noodles are browned pretty evenly, add Italian spices and a cup of chicken broth. Alternate between white wine and chicken broth, waiting till the liquid is soaked up before adding more. (Think risotto!)

Next week is finals week, and because all of mine are at the end of the week, I will have a four-day weekend coming up. I plan on making a Spanish tortilla for dinner one night, which is a delicious, simple egg and potato dish (well, simple in terms of the ingredients--it can be tricky to make). I spent some time living with a family in Spain a couple summers ago, and they showed me how to make it--I've been meaning to do it myself ever since! I want to do it during the weekend so that if I screw it up, I have time to come up with a plan B!

I cook every everything that we eat (due to an auto-immune disease and food allergies me and the DH are full paleo/primal) So when I make something it isn't always that special to me. Before learning about my problems I baked ALL the time. I cant do that anymore, because I can't use normal flour, and Almond flour is a bit pricey, so baked goodies rare.

But today I decided I wanted a baked treat. So I found a recipe, tweaked it, and made an almond flour banana bread with chocolate chips and cinnamon! http://imgur.com/dDknrvS

DH was so happy when he got home and smelled the house :D
