Yes! This is something I did in my divorce five years ago and it's protected me well.

My ex and I can sign up each kiddo for one activity each w/o the other's direct approval. Beyond that, mutual agreement is required. In terms of reimbursement, we each pay 50% of expenses and it's capped at $1500 per kid per year (regardless of the number of activities). This prevents one parent from signing the kids up for equestrian sports ($$$$$) just to spite the other parent (yes that really happens). So if my ex signs up my oldest for a travel sport and it's $4k, I'm only on the hook for $1500.

Set the reimbursement cap to whatever is reasonable for your situation.

Just put it in there that all of them need mutual consent if the parent wants the other one to help pay.

If you have agreed to a parenting plan where you are paying her child support there is really nothing to stop her from sending you the bill, cap or no cap. On the other hand if you were wise enough to use the kids as leverage to get custody most of the time with zero CS obligation, you can try adding a cap

We had that added at mediation. XW wanted to cap extra-curricular expenses at $1200/year per child.

I agreed.
