In your post you answer your own question. I know its an extremely tough pill to swallow as you still see the 'positive' in her, but know that everything that bothers you and her (especially her) will not magically go away. If you think that your mental health is more important than enduring constant fear of conflict, I'll have to congratulate on realizing it now than later.

Run my man. I’d start by documenting the previous abuse, and everything going forward, and lawyer up. It may only get worse if you don’t stop the cycle

For me, I'd believe them when they are upset and emotional. That's when people are unable to hold themselves back out of politeness, fear of consequences etc. Just as they say there is truth in wine, there is probably truth in hysterics as well.
