Today I am making pinto beans. I failed the last time so I hope I do good this time. I am not a very good cook because I barely started.

It's for beans and cornbread at church. It's kinda like a potluck.

This weekend I left my cozy warm house at 76' above sea level to go camping in the mountains DURING a snowstorm! I cooked a steak over a good hot bed of coals, got a nice sear on it and perfect rare middle, despite the fact that the "up" side of the steak was getting SNOWED ON as I cooked it!

Adjusting the grill height and time for the conditions wasn't the biggest challenge. It was the spectrum of the white LEDs in my headlight: White LEDs produce relatively little red light, which makes it very difficult to judge the done-ness of meat by sight alone! I had this problem with my old RV and added red LEDs in the kitchen and stove area fixtures, this helped a lot!

Regarding lunches, I've been loving salads lately. I'll chop up a bunch of lettuce the night before and put it in a container. Then I get all my toppings in another container. I've been having beets, chickpeas, water chestnuts, artichokes, hummus, avocado, sweet pickles, etc. I keep a small bottle of salad dressing in the fridge at work. Come lunchtime, I pour the toppings on top of the lettuce, drizzle dressing, mix it all up. So delicious!

I also got a juicer from my hubby last year and I'm juicing carrots and ginger and then mixing it with fresh orange juice I get from the store. I'll take it to work with me in a canning jar and then swap the lid for one with a straw. I'm trying to eat more fresh fruits and veggies and stay hydrated this winter.

I love soup and risotto this time of year. I made an asparagus lemongrass risotto this weekend that was just divine. The broth was made with ginger, garlic, lemongrass, and soy sauce. It was unreal. Also made ginger curry noodle soup last night. Absolute show-stopper of a recipe.

I'm going to try out that vodka pie trick this weekend, I think.

I am going to attempt to make gyros with taziki sauce and homemade pita bread this week! I've made the sauce and the pita, but never the gyros. Also making tacos, and easy and delicious standby.
