I wouldn’t really rehearse much aside from the asking for her name part.

Maybe use the “chalk marshmallow” mix up as an ice breaker that DOESN’T make her look dumb in for mistaking the two.

So something like, “hey, I like marshmallows too, especially in a s’more; I’m “iceking123”, what’s your name?”

That script is crap. Just wing it. The only thing you plan is whether you move forward or not. Everything else has to be natural you'll just come off weird.

You think rehearsing you reply is your ally. You merely adapted the reply, I was born in it. Molded by it. I didn't see the reply until I was already talking to her. By then to me it meant nothing.

I think that would be an awesome thing to say and you should have no problem with getting things goin after that (great story aswell)

I (personally) wouldn't say that "i should've introduced myself last time" as it (might) look like you've been thinking about the last time you met and it ment alot to you etc.. (nit picking)

But you could just say
"Hey there,. I’m Edson, what’s your name? etc... or even go up to her when she's working out and say "hey i was looking for some marshmallows have you seen any?

All good, but don't be sorry and I am personally not a fan of an early "beautiful". I would suggest to just be as casual as she was with her starter, but this time take a conversation a little longer. No need to mention previous day, unless something will come up naturally.

Don't talk too much and add a complement about her too (some of her muscles maybe) , It reduces the chance of getting friendzoned .

Just introduce yourself. Seems like their is already a good vibe so their isn't any risk of anyone being rude or disrespectful. You can even talk a little more and chat if permissible. Maybe you can be spontaneous and join them on the next workout and make a gym date 🤷‍♂️. You two are already gym people; it is a perfect setup.
