My first thought when a woman is just hanging out drinking wine and approaches me is to join her for another glass of wine, not to settle for a number. Strike while the iron is hot and go for the instadate and even the pull. It sounds like you guys don't even live close by. So the time to make moves was in the moment.

You also should've asked for HER # straight up rather than passively writing yours down on a sheet of paper and putting the onus on her. She already did something out of the ordinary by approaching you. Now she did even more by going out of her way to text.

Then the same passive energy by you continues over text. Again, after everything she's already done, now you're asking her to "show you her neighborhood" rather than SHOWING HER a cool spot you know and steering the ship.

"I didn't want to be intrusive" is a weird thing to say. It's hyperformal and apologetic, when it sounds like she was trying to be coquettish and playful ( "I won't tell you what to show") Also you oddly closed the conversation by saying "Anyways, wishing you a nice day!" WTF?! What is she supposed to say to all of this?

After she said "I won't tell you what to show" I would've opened the next day by assuming the positive and more importantly something that finally LED the interaction somewhere. "Haha... I don't mind a little mystery... since you live in xyz how about we hit up xyz rooftop bar next time I'm in town? I've heard good things." etc

But overall, it's your passive energy that leads to these kinds of outcomes.

Hey, so I will ignore the other doofuses who have no idea what they are talking about.

I could barely follow the conversation that you were having, but the jist of it was "so what do you do for work, so what do you do for fun, so what are your hobbies". That's NOT how you connect with women. That's just boring everyday mundane stuff that any attractive girl will hear on dating apps five times a day.

Your goal with any woman you are attracted to isn't to "get" her or to "attract" her. It is to connect with her and see if she is worthy of your time. I would have started by teasing her a little bit like:

"Can I ask you something? Do you try and pick up random guys with dogs often?"

She will probably say "what? Nooo, it's just that your dog was so cute. Men try to pick me up all the time, blah blah blah"

Then the secret to connecting is to make statement about something you are experiencing and ask "how about you" or "what do you think" type questions. Say "well, I'm glad I was walking my dog at the right time and right place. We are now snuggling together in bed. How about you?"

She tells you what she's doing, like "I'm having another glass of wine in bed too".

You want to start introducing the idea of US in the conversation. Something like "We should be having a glass of wine together....but not in bed, that can get very messy if you spill your glass". Get it? We should be having a glass of wine together. We, US, the two is US!!!!

If she's receptive to something like this, responds well, blah blah, tell her "Hey, I would love to get to know you a bit more...in person. I will be back in your town next week and I know a great tapas place on Alabambra street. Let's go out there on Thursday at 9pm".

That's it. That's all you needed to do.
