It just depends on the context. Your two most basic options are going to be to either be comforting or pick on her, and you have to pick which of those you do based on the situation. How you go about either completely depends on the nature of your relationship.

Comforting:

Daddy misses you too.
a heart emoji
You're a sweetheart.

Picking on her:

You should.
Duh.
I miss your tits.

You also have a third option, which is an advanced form of comfort, where you ask her to elaborate. It's best for when you basically want to give her permission to gush about you without looking stupid. An easy option for this is to just ask something like, "Why's that?" but if she does go into more detail afterwards, then you should reward her with comfort and not follow up with picking on her. Otherwise, you'll be conditioning her to stay closed-off to you about doting on you, which is something you don't want.

She wants to get you to immediately say "I miss you too." This is the answer she is expecting. Don't do this, never be predictable in text game. Rarely let her lead the conversation, unless you like saying "I miss you, and I love you" back and forth endlessly and forever.

When you get the "I miss you", either she truly misses you, like she is on a work trip or something, or she just wants to get you to say "I miss you too." For either case, ignore for at least an hour. After your radio silence, start in with whatever adventure you have been on while she was away. Heavy embellishment is allowed, and it helps if you actually do do something cool. (heh heh, do-do) This is where you can take her on the emotional roller coaster. Also, fielding text messages is not high on your priority list. You want her waiting by the phone for you, not the other way around.

If she presses the "miss you", go with the trusty Han Solo, "I know." then totally dismiss the "miss you." You are a man, you know she is going to be gone, you can compartmentalize this and it does not effect your feelings, your day, or whatever your adventure is on that day.
