The "I know" is the best move but only if you know how to play it off. Otherwise go with the staring into her eyes and smiling slightly move. For obvious reasons, you never want to reply with, "I love you too" or anything similar.

Or "You don't need to". Say it in a neutral (but not cold) manner – this way you can play it out both as a joke and a serious statement depending on her reaction. If she takes it seriously and asks "why?" then tell her the truth: that you don't want her to become too attached to you and you don't want to hurt her feelings. Need I say she'll fall in love with you even deeper after that?
