On the one hand it's discriminatory on the other there have been women only trips, women only workout areas, women only floors in hotels. women only carriages / rideshares, etc. If those are legal, this should be as well. Women can participate in other trips, which is usually the argument. Additionally, there is the issue of it being a church event. I give that a bit more latitude when it comes to sex based discrimination.

She's an adult. She could agree that only men can be priests for example. When it comes to children though, I tend to look at permanemce as the standard. Raise them in a religion because they can always opt outin the future as they reach adulthood. Ear piercing is problematic, but the holes will close by simply not putting an ear ring in for some time. Circumcisions are irreversable and even if reversable in future, will require surgery and probably would be similar rather than the same foreskin.
