So, as the title summarizes the time has come to legally create a custody agreement with my daughters mother. We had been operating under an informal agreement of mutual respect, but she has decided to fuck that up. I recently entered into my first serious relationship since her and I split, and this apparently has set her off. She is suddenly putting all the restriction on my access to my daughter, whilst demanding even more money. Im already broke as shit. I live in a 73 winnebago behind my small motorcycle shop. Making ends meet is tough enough, I just started this business 2 years ago and its barely stabilizing. She is loaded. Her dad pays for everything, and just bought himself a new Jag for 80k, she drives a new Lexus suv and lives in a duplex he gave her where she rents the front unit and gets to keep the rent. She said she needed to put our daughter in daycare so she could go to school, but she used to call me all the time at hours where I thought 'Shouldnt you be in a class or something?', so I think she put our daughter in daycare just to get a break. Which I dont blame her for, and the daycare has been amazing for my daughter who shows massive improvement and learning. She has a history of being a wild liar, and not like 'where were you friday' kind of lying, I mean 'I have a fake evil twin sister' kind of lying. I hate that its come to this, but I need to get our agreement legally set so she cant just change it whenever she wants however she wants, and I want to pay what is fair based on how the state sets it. I just want basic father rights like every other weekend, alternating holidays, a couple weeks during summer break and some input on the decisions concerning her. I know I live in a trailer, so cant really keep her myself, I have always taken her to my parents. With this girl Im with I will probably move in with her soon and she has a decent house in a decent working-class latino neighborhood. This is one of the things the mother says I cant do, is keep her there. But it all just sounds like jealousy.

So, this was probably way too long and TMI, I just wanted to give some back story. We are in Texas, so what can I do to get this process going? Everything seems geared to the mother as 'primary custodian', like I cant even file to establish child support thru the AG. Help?
