What substitutes do you use? I have to cook gluten free for nearly my entire family. I used to substitute with rice, almond and now I have been experimenting with coconut flour.

I tried these and they turned out pretty good. I find that I need to tweak the recipes quite a lot sometimes to get the right texture. They don't always rise and have a bulky texture sometimes. I have found that using eggs at room temperature helps a lot.

This is a good one. I haven't made it myself yet but a friend has made it for me and it was nice!

We are GF here too (Celiac) but I hate how many steps/ingredients I have to use to get the texture of regular bread. Xanthm gum can be hard to find sometimes, unless you have a flour mix that already has it in there. I also wouldn't recommend Bobs Red Mill AP Gf flour for that particular recipe (the beans in it give a heavy flavor) but use a brand like King Arthur if your store has it. The flavor and texture are very good.

I never had much luck with GF bread.

But, GF goddess has great GF recipes and she does have a few for breads and rolls. http://glutenfreegoddess.blogspot.com/

My only advice for bread it to purchase a tall thin pan so that the bread doesn't come out extremely short.

My SO is gluten intolerant too... We should compare notes, and share recipes!

Unfortunately, I don't know his gf bread recipe of the top of my head, but it's really good. Maybe he will chime in. But the number one thing you need is a quality bread maker with a gf setting. Do you have one of those?
