I offered to bring him soup and he said let's go out for ice cream instead.
Now, he might have been legitimately not in the mood to hang at his place, but this, coupled with the fact that he supposedly travels a lot for work, and refuses to call you his girlfriend, and then not even texting to cancel, reeks of plate-spinning behavior.
Oh and
I am soft and feminine (he tells me this).
tells me that he reads TRP. I would hard next this guy. Sorry.

TBH I would end it over text. Something like, "I don't think we should see each other anymore." Boom. Over. Done.
He may try to guilt trip you into remaining a plate. You don't owe him an explanation beyond "I don't think you're the guy for me."
Common excuses he might make include:
1) "I'm busy/tired/overwhelmed." (Doesn't matter what he feels. If he truly gives a damn he will climb hell and high water to keep you.)
2) "But I care a lot about you!" or "Let's just be friends!" (aka "Please remain my plate so that I can continue to have as many options as I can just in case my other plates don't work out.")
3) "I wasn't doing those things purposely/consciously." (Even if it was unconscious, that still means on a deep level, he's not ready for an LTR. Plain and simple.)

I should've worded that differently. No disrespect meant to TRP at all.
I don't care if men read TRP, but as stated before, the goals of TRP and RPW are different. TRP overall, discourages marriage/LTRs in general while RPW encourages marriage/LTRs. It just sounds like the goals of OP and the man she is dating are incompatible, is what I was trying to get at.

I'm currently in graduate school and it takes a massive chunk of my time. Some of my classmates are in LTRs or married but it's a huge sacrifice for both the student and their significant other!

This is news to me. TRP makes sure men know their worth, plus how much of a shitty deal the average modern strong independent wymmyn is, which, I suppose, indirectly discourages LTRs. What our readers make of this is up to them.

No doubt, when I read the guy cancelling without notice, it just tells me that OP's date doesn't give many fucks about her, making me think that she's either #1 into, or OK with, that (unwittingly?) or #2 dating too far out of her league.

Tell him you're hurt and even more upset by the consequent handling of the situation, see how he reacts. You aren't being unreasonable. If it turns out that he doesn't give a fuck about you (hope not), there's only one thing left to do.

What I mean by league is that someone is either into you, or they aren't. Your feelings are unfortunately only half of the equation, it would be futile try more/harder when someone simply has no part of them that they can give to you.
The general scale of attractiveness matching we use for examples / comparison would be retarded if actualized.

Reading TRP isn't a bad thing (although the way I worded my post makes it sound that way, I apologize!) As I mentioned before, what I was trying to get at was that RPW is focused with the goal of getting commitment, while TRP generally focuses on helping men get sex (read the sidebar material for clarification on this). It sounded like to me that OP's date was applying some techniques one might find on TRP to get laid and spin plates. For a woman who is looking for commitment, that kind of man is not ideal for an LTR.
Now, there are TRP men who are in LTRs/looking for LTRs but I personally would rather not take my chances on a TRP man unless I've thoroughly vetted him and I feel confident he's looking for an LTR too.

Well we didn't see each other yesterday (Monday) and he didn't even text me to cancel. I understand he is studying and busy, so I won't burden him. I am just not sure how to react. This is the first time he has done this. I am upset that he didn't call to cancel, but he doesn't know I'm upset.
Classic case of "He's just not that into you." A rather caddish way of communicating this after weeks apart, but the silver lining is, it makes breaking it off easy and decisive.
The time and energy you were investing into him can now be invested in yourself, and a little bit of effort toward finding a better matched relationship.

I've been lurking here a few months and made this account to reply as I'm almost in the exact situation. Met him in August, 12 year difference, he travels a lot and is "go go go". He knows I am not seeing anyone else and he has said the same, though we have not had The Talk. He's also asked me probing questions about where I see myself in the future.
He came back last month, we made plans for a Wednesday but never heard from him. I texted him the mid day Thursday, he had fallen asleep from doing too much and asked him how he could make up for it. I asked if he was free to go to a show that I had wanted to see and talked about for sometime and he said yes. We had a nice time even though he was a bit distant as he was leaving again the next day. (He said he gets like that before he travels.)
When he comes back, he hugs me like he's been gone for years. I feel like a wife whose soldier husband has just come home from war. When together, he treats me like an absolute queen. He's incredibly thoughtful in the bedroom. He is an absolute gentleman.
Because my guy travels a lot, is very popular with people wanting to have drinks/dinner with him, and has essentially been a bachelor for God knows how long, I give him his space. I am not clingy or demanding his schedule. When he texts me, I text back and am warm and friendly, showing him that he is appreciated. This allows him to be the man he is and the man that I admire without fear from a nagging ball and chain.
I'd suggest, that if your man treats you well and is a gentleman with you, that perhaps try a similar approach to what I do. Continue to live your life, continue your hobbies and making yourself a better person. When he contacts you, be warm. Let him know that you're there but don't be over burdening.

Haha, when I read that it was very eery! It's not the same man as we're both older and he's not in school. So nothing to worry about!
I'm very excited to see my guy as well when he comes back and that's why I have to make sure I'm independent, happy being alone and have hobbies to keep me busy. I very much like him and want to be with him, but I don't want to end up beholden to him. If it's the first time, I personally wouldn't make a huge deal about it, but definitely bring it up that it's upset you so that you're setting the stage for your requirements of the relationship.
I wish you the best for a happy outcome.

You've done more than your share of setting up plans. I would say to fall back and let him demonstrate his interest in you. I seriously question whether or not you two are "exclusive", as guys typically don't blow off girls their exclusive with (at least not in healthy relationships). He should still be pursuing and earning your affection. Dial it back and let him do that. If he doesn't, there's your answer
