This type of dynamic is going to become more and more common.

The worst thing a woman can do to her datability is to have a kid. The worst thing a guy can do is not partake in things like dating, sex, and an active social life. Which means that these two groups (single moms, male virgins) end up with similar value in the dating market.

This stems from the conflation of the hormonal high during sex with actual love. I do not think she understands any context of a romantic relationship without that high. She has some awareness that sex is a component she wants in the relationship:

Sex is important to me, not that it has to play a major role in my relationship, but I want it to be a part of it.

But I do not think she can grasp that sex is not going to keep the relationship working by itself. There are other important components that are required to make a relationship last long. She may claim otherwise, but as seen by the fact that she already has a kid, she has made at least one mistake in who she selects for romantic partners (or perhaps two with the boyfriend who chased her with a knife).

This is why I do not agree with the idea of jumping into bed with someone very soon in a relationship. By doing that you are applying superglue to a structure that you do not know will be sound in the long run. Sure it may make you happy in the moment, but it will not sustain a failing relationship. For those that think the waiting until marriage idea is too extreme, I will say that I cannot give you the answer for how long the waiting period should be. I do know that those who live by the 3 date rule don't appear to have a track record that demonstrates a working model for making a relationship last. While that may apply for other models attempting to make relationships last, I know that there are too many counterexamples showing that the 3 date rule provides no guarantee of long term relationship success.
