You are a lot younger than me so my moves may not work, the world has probably changed.

But fwiw when i was in college, I would have:

say something like "are you asking me on a date? its cute how shy you are!"
enjoy her squirming, play that out a little

then if it went the right way, possibly go with her to eat (taking control of where and when, design it to be slightly rushed / late), make her buy, and then skip the swim meet because of something better that comes up. Possibly even engineer that something and invite her along. Doesn't really matter if she comes or not.

That would only be if i was super bored and didn't have anything better to do.
