You can probably use that to your advantage. If a girl asks you what you do for a living, and you tell them exactly what you do...that's pretty fucking boring. That's what most guys do.

Instead, you can intrigue her by not giving her a complete answer. Be mysterious. Preferably, make your job seem interesting without pinning down any of the details - if she were to press you on it, turn it around on her.

The answer is right in your title. "I work for the government and cannot discuss it to much." Smile slyly, but make sure she knows she is not going to get it out of you. This seems like it would be an IMMENSE DHV. Her mind is immediately going to go to spy/James Bond/Bourne type things. Even one of the Sedditor's responses reflected this. Doesn't matter how boring it actually is, because you aren't gonna tell her. DHV and mysterious aspects of your life in one powerful blow. Just make sure you hide your gun and gadgets when you get home ;).
