Cafes for dates - how pick good ones?

Preferably no live music because then it will be too loud for conversation. On a first date, you're both basically on an audition to be a potential couple. Somewhere fairly casual usually works unless you just feel like treating someone to a nice lunch/dinner. It's obviously up to you. Sometimes I'd go against conventional wisdom and go to a concert or out for a nice meal simply because I was in the mood for it and a companion for the night was worth the price of admission.

One where you’re close, possibly without a table between you (or you just grab the chair and put it near her, a power move).

Loud environment is a double edged sword: it’s difficult to talk, SO you need to get close with your mouths to talk, or whisper in her ears.

Simple. A nice clean cafe that you can talk in. Most important part is being able to talk and get that conversation going. If its too loud or too busy it would be too distracting.

We're on the same page. I'm trying to get advice on what y'all look for in cafes, to become better at that aspect of dating.

Obviously proximity to your place is good, if the evening progresses - or some place that's easy for her to get to. Perhaps also selection of alcohol to suit most people's taste (i.e. wine, beer, sparkling etc). Cozy atmosphere. Etc.

First of all, are you sure you meant cafes and not bars?

I don't do regular "cafe" dates in 99,9% of cases. Because cafe = daytime = bright light, wrong atmosphere etc.

Sometimes I do bars, if it's near my house, where you can buy cocktails/drinks and then pull the girl right after drinks finished.

But MOSTLY I just pull home straight away after meeting her in 5-10 min distance of my apartment.
