I was out at a bar with some friends and we are drinking and having a good time. During the conversation my female friend who is sitting beside me puts her hand on my thigh / knee and let it stay there for a bit.

All that having been said, in this situation, what she did was basically physically escalate on you.

Generally speaking, it's a pretty safe move to mirror whatever has been done. Which means you ought to have been putting your hand on her thigh, roughly equivalent to how she was doing to you.

Putting your hand on her hand would not have been mirroring, but would actually have been responding a bit emotionally when what she did was less emotional and more towards the sexual exploration end of things.
