The content of what you say isn't what's interesting in itself, its whether YOU are interested in it and feel passion for it as you say it. People can feel your vibe and thus you become interesting.
I can talk about the stupidest shit to girls I just met that on paper sounds super boring but because I'm interested in it and genuinely having fun I come off as a super interesting and fun person.
It's about the vibe behind your words, not just the words.

Learn the skills of mirroring and labelling which will make you come across as the most interesting person because you will be paying attention to them and people love it when they feel understood. Interesting people are interested.

For humor, watch standups; don't take life too seriously, observe it's absurdity and talk about it; roleplay situations, eg. If you have a nice car, suggest that you be her getaway driver while she robs the bank
For keeping convo running: just google for topics-- there's a billion of them; be in the present, observe the environment around you, and comment on whatever sticks out; tell stories; be genuinely curious and ask her questions

To me... Its about having life that is interesting. Make a routine that is interesting on its own. Have hobbies, interests and play with them daily. Last thing is about experiences. Make a list of 100 crazy things you want to do in life. Then just keep doing them. Trust me, it will create endless stories to talk about.

What you need are some interesting friends. Then watch what they do and do that. It’ll be uncomfortable for a while but that discomfort is what turns into interesting later. And read more, its like having friends but quicker. I think most people at 19 are boring. You have a whole life to get interesting you’ll be fine

Socializing is a skill, you'll get better at it the more you try.
Point blank, (aside from drugs) probably nothing you can do right now is going to make you magically become talkative. You just need time and practice.
A big thing for me has been developing extroverted energy. One (shallow) part of being interesting to people is being interested in what they're saying. Most people just want to talk about themselves, and their lives without feeling like a burden. You could talk to someone for 2 hours, not say a thing about yourself, and have them walk away feeling like it was the greatest conversation.
Make sure you're not monotone. A lot of interest is communicated through inflection.
Don't shit on yourself. Everyone is different.

In the nicest way, this comes from a place of selfishness. You're just thinking about what you're interested in, and potentially what she's interested in to make it fun for you.
You should by default be looking to make the interaction fun for her, by being interested in her. What makes her tick, respond, cringe, react to certain subjects, laugh, get a little defensive...
But as an overall, the more interests you have the more you can relate to others. And by being able to be deeply relatable, you become more likeable.

The chances are man, is that this is more about your self-esteem than it is their reaction and your idea that you need to get a certain reaction to be interesting.
Unless you live in a sitcom like Friends, you don't need to be best-friends, always laughing, having the deepest intellectual conversations about the universe.
Having close friendships is more just about feeling comfortable to open up to someone. Which can just mean being there for them and building a lot of trust.
And also, it takes time and patience to get to that point of having a strong connection. I think you're putting too much pressure on yourself.
