You just talk and get to know each other. If you get along well, then maybe she'll start to feel more comfortable with the idea of playing pool on the next date. Maybe she has never played pool and it would be embarrassing for her to do that in public with a stranger.

Take the coffee date. All it means is that she's not comfortable with the pool date yet. I mean hell, the coffee date is better than the usual which is "can I bring a friend". Just go for the date, talk about her. Try keep things light hearted and flirty, maybe tease her a lil bit here and there. If she has a fun time then pool may be on for the next date
