Some people are very weary of strangers making moves on them too early. May also have intimacy issues. Normally I would have laughed it off and said I'll have to get that hug on our next date and planned something right then.
If you haven't planned other dates/she isn't very responsive you are probably sol and misread the situation. If this is the case, I'd ask for feedback just to help calibrate yourself better l.

I considered the idea that she may be weary to a hug on the first date with a stranger. That would give me the benefit of the doubt. But at the same time I know I haven’t met every woman on the planet, but I’ve been on a lot of dates and never once have I shook a girls hand. She’s contacted me over Snapchat but I haven’t read it yet.

Your odds aren't good that's for sure. However there is a chance.
I've been on a date where the woman who was very enthusiastic and seemed happy, ended up jetting 45 minutes into it. Waved and was like I had fun!!!
She texted me later in the week at like 11pm "hey want to go for a drive". I went and picked her up. Drove around the local arboretum chatting, very little warmth in her posture, I finally just pulled over and calmly initiated. We ended up back at her place where she proceeds to tell me about her crippling anxiety and her only interest is banging and getting high off her weed plants.

Sometimes you just have to go for it. Way better than not making one at all and getting a handshake at the end and getting stuck in the friendzone. Did you escalate physical contact in any way? Anything flirty? Little things like that lead up to a kiss and it shows that you want to be more than friends. If you do some little things first it won't be so awkward going in for a kiss later. Just keep learning and practicing, there will be another one for sure.
I used to be super shy but learned you have to get out of your comfort zone to improve.

Exactly. Better to get rejected than to portray someone not interested. By the end of the date she should be wet and ready to jump your bones to the point that a kiss is a foregone conclusion. Learn how to escalate sexual tension.

If you make a move too early, especially if this was a first date, then the girl would've thought he was easy and not a challenge for her which would make her ghost him eventually. It's a lose-lose situation.

I see your reasoning however there are many ways to test that early on in the date. We're talking about escalating sexual tension. You start small by testing the waters and increase it as the date goes on considering she reacts to your tests. None of it involves an awkward kiss out of nowhere. There are tons of things you can do to achieve that goal. I understand your logic behind it though. This would be considering he doesn't make the mistakes of being too eager and coming off as "try-hard". Pretty hard to escalate when you've already messed up from the jump.

Lol it’s fine man we all live, learn, and fail. I started off as that kid what was afraid to touch a girl’s waist when dancing with her haha. Just don’t be afraid to touch her. Give her a two arm hug when you first see her. Stand shoulder to shoulder with her. Give her a high five if you’re going bowling. Soft push her to flirt with her if you’re young and into that. Touch her back to lead her into a certain direction and you’ll be having make out sessions on the first date, good luck!

Everyone has different speeds, if you felt the chemistry was really there and it was clear that it was an actual date (you being interested in her), then she’s probably just moving slowly. Don’t be deterred, keep doing what you’re doing and just pretend like you don’t care about getting a handshake.

We ended the date just talking for hours and hours.
Your first date should never "naturally end".
The date should end abnormally and abruptly before one hour has passed, at the height of the fun, when YOU decide you've got to get home.
This creates an incredible amount of tension and desperation on her end, leading to her wanting another date or even to go straight back to your place or hers.
