Shake their hand and say its nice meeting them but you gotta go. Works 100% of the time

etc.

I do this even if it's going swimmingly, give her a chance to miss you and legitimately spend time with friends. If there's a chance I won't see her again and she's aces then I'll get the number 'in case of adventure'

You're asserting control of the situation by choosing to end the conversation on your own terms, getting compliance, and all while not excluding the possibility that you might want (or have) to talk to them later. Otherwise, just ignore them after that point as if they really had left the room or whatever.
