personally id go with blatant sarcasm to kind of help them get it and try to escalate the teasing from there

You can use also photo or audio recording, so you can make her understend by your body or vocal language/behaviour if you're joking or not.

emojis and faces (:P , ( ͡° ͜ʖ ͡°), etc.)

making jokes so over the top that it's obvious they're not serious (suggest you rob a bank together as a first date),

making jokes that are funny regardless of whether or not they think you're serious ("I've always wanted to be a ballerina but I could never find a tutu in my size"),

(if she takes a joke seriously) tease her for taking you seriously and being gullible,

or keep going while she thinks you're serious slowly escalating the joke til it gets obvious that she has been bamboozled

etc.

I understand emojis would be a good option to show I'm just playing, but I also feel they kinda ruin the joke, and can even become annoying in the long run, because it takes the fun away from it.

don't worry plenty of girls will still wonder if you're serious even if your text ends in "ROFTLMAOOLBBQ :-^)" so the jokes will still work

use a variety of laughs and faces and emojis so they don't get stale

Short Asnwer: DON'T TEASE IN THE FIRST PLACE

No matter what you do there's always a big chance it'll come across the wrong way. Just use texting to set up logistics for the next date/hang out. Text doesn't even come close to delivering a joke properly because it lacks human interaction, which is nuanced because of facial expressions/tone of voice/timing (For example, listen to any jokes that Siri or Alexa might tell. They're terrible)

The only time it's really acceptable to text playfully is if you use memes (becoming big nowadays and it's impossible to take them seriously), lighthearted jokes that can't be taken the wrong way (basically just puns and dad jokes. No teasing in any way), or you're texting a LTR that knows your sense of humor inside-out.

Even then, don't text too much because the more you text without hanging out, especially if you haven't fucked the girl, the more your chances of just being an orbiter rise, since she starts associating you with a faceless name instead of a sexual human being.
