I realize the simple answer is the media and social pressure, but how can that be so powerful to overcome their basic instinct?

For example, I've noticed a pattern when I hook up with women.

Yes, the usual shittests, etc. but then eventually (usually after sex) they become very docile and endearing.

It's the most attractive personality a woman can have. Absolute surrender.

Then eventually they revert back to feigning some level of toughness or masculinity, like she doesn't need a man, etc.

I suspect this is a recent phenomenon (in other words, it's nurture, not nature).

It's unattractive when a woman acts like this, because it's masculine energy, but also because for me I see it as non-genuine, or I see through the charade and wonder why she's trying to fool herself?
