That's because hypergamy is always related to a scarcity mentality. Women are constantly unsatisfied, because they always feel that there's something missing and they want to have that need satisfied. If she's with someone good looking but poor, she wants someone with money. If she's with someone rich, she wants someone better looking. And if she's with someone with wealth, good looks and who treats her well, she'll want someone who treats her like crap and gives her more tingles.
Hypergamy isn't about finding someone objectively better. Objectivity has no meaning to a woman. It's about finding whoever she feels is most qualified to fulfill whatever need she feels she's missing.
Corollarily, it's also why women with a very large n count can never make loyal housewives. They will have experienced so many men and relationships, that they know exactly what you're lacking in every single area, since they're comparing that one trait to whoever of the hundreds of people they've been with best represented this trait. They're expecting to find the one person who's the greatest expert in every single field at once, even if many of those fields are directly opposing each other. And so they will forever remain unhappy and unsatisfied, feeling that whoever they're with is insufficient.

MGTOW who use hypergamy to explain all of a woman's libidinal choices will invariably discover that there's something missing. Because you are right. You notice some woman like Mary Kay Letourneau, and you think it's an anomaly. Then you see this kind of thing everywhere, how chicks are seen devoted and loyal to these absolute losers, who have no money, and aren't even all that good looking or have any frame.
From what I have gathered, hypergamy explains about half of a woman's libido.
The other half is solipsism, which can often go at odds with hypergamy, and can even overtake it.
Solipsism is the dark matter, the undiscovered country, that few MGTOW have really studied extensively. I've done some speculation into this area. Basically, a woman has an ego...a huge one at that. The problem is, every time she gets with a man who is better than her (hypergamy), she feels more and more inadequate. She says to herself, "This guy is so astronomical compared to me, nobody notices me. I can do nothing better than this Chad can do, so I'm nothing but this Chad's bitch if I stay here."
That's why she leaves. And when she does so, she doesn't leave him for another Chad, because he'll be like "meh, she's a ho."
She finds the most pathetic, low life loser she can stomach, and loves that omega field in ways she never loved that Chad. Because that makes the Chad suffer, with the added bonus that now she feels like she is always going to have something to deflect criticism towards her. Because nobody, in her mind, can blame her for being bad, if the one she's with is badder. Nobody can blame her for being irresponsible, if the one she's with is more irresponsible. Nobody can call her fat, old, and ugly, when the one she's with is fatter, older, and uglier.
Solipsism. I find it works better than hypergamy as an operating principle in the female libido sometimes.

Hypergamy is still strongly at play in this particular instance. The doubt she is exhibiting is classic "Is he the best I can do?" hypergamous doubt. Women also have a proven dualistic mating strategy. Alpha fucks, beta bucks is always in motion, and women will try to ride the wheels off the cock carousel and try to get a beta to pay for alpha seed before they are forced to get off and settle for a beta and his DNA.

When women ovulate their sexual attraction shifts dramatically. This has a ton of scientific evidence behind it. Personally, I’ve had an ex who was a born again Christian and sworn to abstinence until marriage (therefore wouldn’t have sex with me) tell me “You know I would have had sex with you when we were together two days ago - I was really horny because I was ovulating”. That relationship didn’t last long.
I’d bet a lot of times when women cheat this is a primary driving factor.

The problem, of course, is that the boyfriend is "loving, smart, caring." This sends her the unspoken signal that she is worth more than him, therefore she could do better. (That is to say, his kindness is perceived, if only at a subconscious level, as him kissing her ass, therefore her being superior to him.) The unemployed drug addict with a criminal record, with whom she will cheat on her boyfriend, treats her like shit, and this subconsciously sends her the message that he is worth more than her, therefore she is probably pushing the limits of her ability to lock down a high status man.
This kind of maladaptive expression of female sexual behavior will continue to be passed along genetically as long as it serves the overall needs of the population, by hooking up fertile women with men of good genes or high status (i.e., access to lots of resources). If a handful of women suffer because of this instinct being too prominent, or expressed in a suboptimal or pathological way, that doesn't alter the fact that the presence of this instinct in the population overall increases the fitness of that population.
Another example of this is hybristophilia -- some women will have this really strongly, to the point that it adversely impacts their life, even results in death or infertility (the two sins against natural selection), but as long as it is not expressed in this pathological way by the average woman in a given population, it isn't a problem (except for the individual who suffers from it).
The whole PUA idea is that hypergamy can be hacked, in order to present oneself as though one were a high status male, and to give the woman the impression that she is less valuable than him. This is simply the exploitation of a maladaptive expression of female sexuality, and it's going to work best with the chicks who are the most maladapted. In other words, in those instances when "game" works, it only pulls crazy for you.

Consider my advice instead:
This is absolutely not normal for a healthy relationship, I am not sure why other people are telling you to "tolerate it". This means something is definitely not going right and you should not move in with him. Consider that these moments would only become more frequent in the future and it will eventually lead to more unhappiness and aversion towards him. Your heart is trying to tell you "he isn't the one", and you should listen before it's too late.
Maybe the guy will catch a lucky a break before he moves in with her.
