If the woman takes this kind of jokes seriously, then that show she doesn’t have a sense of humour, and as such i wouldn’t want anything with her.
An old woman with a sense of humour will just know it’s all playful and fun, and that will make her far more attractive.
So it’s a win win to say these things to weed out bitter women, and stick only with those who do not take themselves so seriously.
Considering she was the one reminding herself that she is older by saying she could be your mother, there is really no reason to not tease her about it as a joke.

Just smile and say, “shut up, you are not.” Because that’s the banter she’s expecting.
But if you are in a conversation with more depth/quieter area, or you happen to be chatty (or is reflecting her talkative energy, which is a positive sign especially coupled with a lot of eye contact), you can wax philosophical about the passing nature of physical beauty and how inner beauty like sense of humor, kindness, sophistication endures and only gets more refined with time.
Add something in about aging well like fine wine and tighten the straps on your helmet boy. Older ladies know what they want and know how to get it.
HOWEVER: Only say these things if you mean it, and not as “game” to spit at women. Most of them know a disingenuous line when they hear it. You say these nice, flowery things as a compliment to make them feel better, yes. Not as a way to make your pants area feel good. No. Don’t manipulate people to get your rocks off. Ew. Gross.
Instead, send them an invitation they would gladly accept.
Cyrano De Bergerac wasn’t wrong folks. Study your spellcraft. The right combinations of words can melt the coldest heart, open any locked doors and avail you opportunities unapproachable before. It’s more than abracadabra and open sesame.

I mean wordsmithing in general. There’s no “magic spell” that works for everyone. Read a lot of everything. Enrich your own life so that you can help enrich others. Find shared interests, be excited about them. Take delight and savor the shared experiences. Be honest with them. See them more than what they want to be seen as. See them as they are. Imperfections and all.
In the name of decency, she’ll draw her curtains, but never quite closing them completely. While it might be both of your desires to tear open those curtains, it wouldn’t be considered proper or sophisticated, would it? It would be a far greater feat to draw her out with the right words, implore her not to draw the curtains so that she can see you draw her with your words.
A woman’s heart attained in this way is a far greater and worthier gain than to possess a woman’s body by sheer strength and brutality alone, wouldn’t you say?

I cant provide an answer that works on every single woman but Im a 25 yr old man who has always attracted older women. When they say that line to me(cause it is a line) I usually say something along the lines of "ahh okay so you think I might not be able to keep up with you then?" or just anything putting playful energy out. My humor is self deprecating anyway so it's fun to pretend like I can't handle them. Every time in my experience they laugh and throw a compliment back at you(older women really know how to say encouraging things to you) to which you reinforce the idea that there's no way you can handle her but you'll give it your best shot. They love hearing they're still sexy and appreciated. So to answer your question, really any response that let's her know that age thing doesn't matter to you, as long as she takes it easy.......
