Dont double book. How you want to handle that is up to you but the last thing you want to happen is to be on the hook for two dates at the same time.

I've done multiple dates on the same day. I've never double booked, and I've only ever had one flake (I always confirm the day of).

So for setting up multiple dates, what I did was scheduled them about 2 hour apart. My first dates dates typically run 60-90, minutes.

I set them up for close locations, not the same venue. So basically I could finish date one, drive 10 minutes and be at date 2.

I wouldn't double book now in my life, but if I was brand new to dating then I would. It's important to get a lot of new experience in, and online dating can be pretty flaky.

You have other dates. They probably won't all flake. I wouldn't double book, but I would potentially talk to some friends and make plans for if that date falls through. That way, you can still go on the date, but have a fun distracting activity if it doesn't happen.

I'd tell her "I'm sorry I made plans for date", and then suggest the next available time.
