I've actually had dates at a bar where I look at two people and ask the girl what she thinks they're talking about or how they met and she takes the lead on coming up with a story or reading them. I agree with what she says and /or offer an insight to be involved. Then she'll pick another two people and ask me what I think about them and it turns into a game. I've done this a few times.

Being able to read the body language of others and manage your own body language and non verbal communication is critical. I highly recommend What Every Body is Saying by Joe Navarro and Without Saying a Word

But if you are walking into a room with strangers and need to rapidly assess status: look at where people's bodies are facing.

Breath! Calm! Pay attention to the small things notice small things one of the most common thing I do is see people’s reaction the way they react certain things tells me what kind of family the person grew up in and easily able to tell what kinda of person this is and able to predict with what they gon say

Try feeling it more. I've found reading only shows me what I think of the room which is useless.

The easiest way is more social interaction. The more you do the easier you will pick up on social cues.

If you mean in specific people the behaviourism section of psychology delves into this and is very interesting as well even outside the context of dating and seduction.

keep your body straight but turn your head like security camera, walk the room, see everyone, and Look where peoples eyes are directed. this usually shows you who the most dominant person in the room is. make friends with that person, get in their group, and boom. you're golden.

body language, where are their hands? are they comfortable, laying back (submissive and sign of attraction) putting their hands in their lap (sign of attraction ) if your on a date, where they put their hands is usually where you want to hold them.

are their bodys showing being submissive, (crossed legs?) off gaurd (crossed arms?) are they licking their lips, showing more of their skin, putting things near you like a cup or glass, playing with their hair. (sign of seduction)

keep eye contact too. some girls will look away, look back 45 seconds later at you which also shows a sign of attraction.
