Just let the poor girl do her job my guy. That's kinda the main thing I tell my buds when we go out. The waitress/bartender/cashier may be intrested in you but odds are far more likely that's she's just doing her job. There's countless girls at bars or party's or just in the streets. Don't make their work place somewhere they have to be nervous to be at.

TONS of eye contact. Smile with your eyes and connect with her through eye contact. It sparks attraction.
TIME. It takes a lot of time for her to get interested in you. Become a regular. Look for basic IOIs.
TEASE AND FLIRT. You have to tease her, you have to talk to her each time you're there. Make her laugh, begin a teasing dynamic.

There is nothing not awkward about starting a convo with a stranger, it's normal to not know how they will react.
