Mantis! 90% of mantis (commonly called praying mantis) species engage in sexual cannibalism. Some female mantises wait until the deed is done - but plenty of them start eating the male during copulation. Some male mantises even have a handy biochemical response that ensures that, after they have been beheaded, the vigorousness of their thursting actually increases.

Some researchers hypothesize that this is so the female receives sustenance, leading to better health for her and her offspring. This is backed up by evidence that shows that hungry mantises engage in cannibalism more often. Others suggest that this is - and I swear I am not making this up - to get him to remain mounted for a longer time. This is backed up by evidence that shows that males who remain mounted longer don't get eaten as much.
