Great thread!

Currently living in a very expensive Scandinavian country and have wildly improved my cooking skills over the past year+ (they weren’t bad to begin with).

This improvement is simply due to lots hard work, consistency, making mistakes and learning from them. It’s something the vast majority of people are capable of :) This includes you, if you’re reading this and want to improve your cooking skills ;)

Anyhow, on the menu this week were:

1.) Roasted Pork (Scandi style)

2.) Duck à l’orange

3.) Pasta carbonara

4.) Beef and Broccoli

5.) Lettuce wraps

6.) Meatloaf (The bf had never tried it before and really liked it 😅)

I've been using recipe boxes and I deffo recommend. All the fresh ingredients are delivered with a recipe because I get so tired of deciding what to cook!

I'm back at college so I don't have a lot of time to prep and make my meals anymore, sadly. I ended up making fajitas and chicken with cilantro rice yesterday, which took me around an hour to make but was super good!

I made a simple roasted chicken in the instant pot, with roasted Brussels sprouts, and regular old Jell-O brand lemon pudding with blueberries added. Quick and simple, and I only dirtied up the Instant Pot, a cookie sheet, and a mixing bowl ❤️

I made calzones! A simple pizza dough, filled with meats and a ricotta cheese mixture and baked until golden brown! Fiance approved! :)

Tomorrow my boyfriend is coming over and I’m going to cook him chicken carbonara! He’s never tried my food before so I’m so excited and he really likes white pasta.

Tonight I also did some meal prep by boiling brown rice and throwing whatever leftover veggies and things I had in the fridge on top. I ended up with some avocado, feta, cucumber and tomato + a bit of salt and pepper. I’ll eat it cold. I just wanted something simple for the next few days :)

A lot of people use a brown rice base and top with beans, corn, salsa and sliced steak- I might try that next!

Recently I tried an alternative method to breading and baking chicken with a crisp. It involved mayonnaise. It went horribly- tasted okay but the skin was weird and dry and the “crust” was much too thick. It also made an awful mess. My only saving grace was that I had his favorite dessert to follow it up. Maybe I did it wrong, but I’ll never know because I am never trying it again 😂

I'd like to make a fish pie today since it's the first day of hunting season and it's pouring outside. My Bf will want something warm and nourishing when he gets home tonight. Just need the perfect recipe now :p

My boyfriend and I recently took a trip to the city (we live about an hour out, in the countryside) and decided to make the most of our time there by going to the Asian grocery store, since any kind of non-European food is ridiculously hard to find out in the middle of nowhere. We went a little bit crazy and ended up coming home with two big bags worth of spices and teas and oils and vinegars and every possible thing we could ever need.

So last night, inspired by our bounty, we made pho! A quick version, because we weren't able to make a long-simmered authentic stock, but I'll be damned if it didn't turn out really well anyway. Next time, I'm going to go the whole way and spend an ungodly amount of time making a huge batch of stock, this way I'll can everything we don't use and we'll be able to have pho whenever we want. :D

Otherwise, nut and apple season is starting! I've been collecting tons of hazelnuts and apples from the trees, and making all manner of desserts. Once the chocolate-hazelnut cake is finished, it'll be time to make apple pie with a hazelnut crust. If anyone has hazelnut recipes for me, send them along! I'm swimming in them and I'd love to know your favourite recipes. :)
