first and foremost, show genuine interest in other people, and what they say. PAY ATTENTION DURING CONVESATIONS, and prove you actually listen to them and remember what they said.
have the interesting things in your life come naturally in a conversation, not forced. Have friends/wingmen or even objects "accidentally" out you about the interesting stuff you do.
hang out with people who could be genuinely interested in your life (example: If you travel a lot, mix with people who would love to travel but cannot for some reason).
last but not least, learn good oratory skills. It is one thing to have an interesting story to tell, and another to tell the story well. The basic tips is to speak slowly, loudly but not shouting, articulate precisely, using a deep, calm voice, and to use (sparingly) dramatic pauses. Use gestures and body language in your story, and hold eye contact with your audience.

Sorry that was a tiny answer. My short but more thought out version is that you have the interest inside of you of the hobbies you now enjoy, thus making you interesting to me . What will make you interesting to most other people is how well you communicate your passion for these interesting things and if you don't have that said passion then find it because there's always some in our bodies waiting to find hobbies to leak out on. One thing that always makes people think I'm interesting is how I never tell openly, but I wait for people to stumble upon a topic in a conversation that I know about then link it to your knowledge of it or something more deep/philosophical and seem excited doing so (I usually am excited because I'm passionate in the thing I'm talking about lol) this is a way to seem interesting because you are getting great joy from within. One very helpful topic/thing to know a lot about it mindfulness because it can contribute to everyday life and everyday struggles people talk about

I can't directly answer your questions (esp. in the seduction side), but here's a tip: you can make whatever you do interesting. It can be interesting but dumb/trivial (e.g. consistent bottle flipping at far distances), or interesting and fun (e.g. traveling).

The only way for it to be interesting for the other person is for you to make it sound interesting. You have to believe it's interesting, (and if you can, make it sound so exciting). Say, you traveled to another island, and met this fisherman.

This fisherman has been doing his fishing for decades. You haven't seen fishing, and you believe it's boring. But you hang out with him, anyway. This fisherman talks about his experiences in a lively manner. His tough days during rainy days or storms, or his biggest catch, or his clumsy attempts when he was learning how to fish. You're hooked. You want to hear more. How does he live his life? Is fishing his livelihood? How is the island? From his fishing experiences, you want to know more about his routine in an island far from the urban life; you're interested in him and not in fishing anymore.

But see, if you, who believed fishing to be boring, and the fisherman tells you, not in a humble way but downplaying his unique experiences, "it's nothing special. It's always been like this in the family. Nothing's changed in the island." That would sound depressing and reinforces your idea how fishing is boring.

I tell you though, it's hard to be the lively fisherman. You need to know the boundary if you're talking too much, or maybe you're unconsciously one-upping the group, or the conversation/topic you're leading is going nowhere (so you need to shift it).

I find the best way to be interesting and properly convey a experience is to talk about how it felt, facts after facts are boring but emotion is relatable and interesting.

First of all you're not a boring person, if you have interesting hobbies and experiences then that makes you interesting. You don't need to become less boring so much as you just need to learn how to being that interesting side out in a conversation. Here are some pointers:

Don't just force out your entire story in one go, keep it mysterious by telling bits and pieces (i.e. This one time in Thailand...)
Ask the other person about themselves and take an interest in their experiences as well. People (especially girls) love to talk about themselves, and they love it even more when people listen to them.
When talking about yourself keep to the current topic of the conversation, or if you're changing topics then nuance it from the current discussion instead of abruptly changing.

This is actually a very deep and important question.

First, you don't need to articulate "every" aspect of your life. Part of being mysterious is keeping some shit to yourself.

Second, a huge challenge in seduction is balancing the fact that when you approach, you are a blank slate to her, and you want to show her how awesome you are, all the while not looking needy or validating yourself. Similarly, you need to balance touching her emotions while not supplicating to her. There is no easy answer to this, because you look like a dork if you walk up to a girl and say "hey look at me, I'm super interesting, let me tell you all the shit I've done." Part of it, I think, is to have confidence that you ARE interesting and if she pokes and prods you, you will have interesting shit to say. But more importantly, you have to find what is important to HER and show that you can connect to it.

One thing i often fall back to is when i speak shortly to random folks at pubs or the likes i often bring up various random-but-interesting facts (or unproven but likely/beliveable facts/truths)

This is a really broad question.

First of all almost every person CAN be interesting. We all have our own unique story, and if you've really done interesting things and hobbies then you have a leg up on most people.

Work on your storytelling, work on projecting your voice, work on holding attention. That's really all it is. It's just a skill. For example, look up RSDFreetour on Youtube and compare Tyler's speeches now to five years ago. The difference is NIGHT AND DAY. It all comes down to practice and repetition.

I suspect the problem is more your presentation, and that's a lot easier to fix than having nothing to talk about. So just practice how you talk about it.

You might make an effort to avoid verbs like "is", "has", "to be" and see if you can come up with more active descriptions. It's also okay to exaggerate a little to bring out what's exciting about a story. Work back from the interesting stuff, and figure out the story based on where you want it to wind up. And try not to just make long lists... instead of saying "I went to 17 countries including ... (long list)" Try something like "I've explored Europe, Asia and Africa. When I was riding an elephant one time ..."
