I see 2 big mistakes that men make when they encounter the "I have a boyfriend or I have a fiance"- line from a girl that they are on a date (yes even something as "benign" as a coffee date) with:

They give up too easily and relegate themselves to the friendzone because they assume that they dont have a chance just because she said she has a boyfriend. Dude! She went on a date with you alone! Without any of her friends. Women dont just go on dates with other dudes while they still are still in a serious relationship (actually they do lol) if they arent seriously into you.
They change their tone with the girl and start acting boyfriendy or husbandy (BORING!!!, definately dont do that). Do you know why she's on that date with you? Because she needs a change in pace from that constant boring boyfriend/husband vibe that her man is providing her. She wants a lover. And if not that then she at least wants someone with a different vibe than her boyfriend. Dont compete with him in that arena.

I know I'm way off topic man. But you kinda missed some signs there.

She wouldnt have gotten coffee with you if she hadnt seen you as a contender. Just saying.
