This is one few cases I agree with those shifty PUA coaches about these situations. Waitresses, baristas, sectary, etc. are classified as "hired help" they're only nice to you because their job/tips depend on it.

You truly want to approach this girl then you gotta talk to her when she's not on the clock AKA any social setting that isn't her workplace.

I wouldnt hit on her. Stick around for a while and open random conversations to her. Go to that place at different days. Everyday if possible. Ask her about random things. When you open a conversation with a smile, and when you dont hit on her, you trigger something in her if your value is high. Dont talk too much, really short questions with small conversation.
Then, go to that place at different days, she will recognise you. After a while, you will realise that she will be more comfortable around you. It can take a week or two. Then, use game.

This wont work if you don't have value.

Do not just leave your name and number without having a conversation and talking to her. If you see her all the time do you know her name? Does she know your name? Also remember if she’s being nice to you she’s paid to be nice to everyone don’t assume she likes you because of that.
