I wanna preface my comment by saying I agree to disagree because I'm not here to argue, but for other users who are newer to the game I want to explain my logic. As someone who has literally done hundreds of approaches, I know what works and doesn't work. Sure, you can go around and simply give girls your number, but unless you're someone who is so physically attractive that you're easily remembered, you'll have a hard time getting a response. Exchanging numbers on the other hand, means you can take the initiative to follow up, organize when to meet, and when to close. It is always going to be the burden of the man to follow up, and the approach you describe will leave you frustrated and wondering why girls are not following up when it's simply because they will not take the initiative.

I’m teaching the guy to be realistic. Sometimes it works, sometimes it doesn’t. He needs to face the reality that it’s not going to work most of the time, and there’s nothing wrong with that. It happens to literally every human, male or female.

You have to hit upon a fairly confidant woman fir her to cold contact you like that. Many times even the ones who would really like to contact you and were into you won’t die a number of reasons.
My current one is a great example. She was ga ga fir me from first sight. Got moreso after a nightlong conversation/interaction. Very early in made clear that she 1)doesn’t do social media (true) 2) hates calling and texting more than necessary (true she likes personal interaction and is very good communicating in person) 3) took my him e and programmed her entire info (number, first and mast name, where we net and address) in and let me know she was very serious but that I would have to contact her.

Good job, but a few things:
1) Generally speaking, approaching a woman with ulterior motives and not being honest about why you are approaching is a bad thing. Men constantly lie to women, so starting your relationship off with a lie is not a good look. Also, you need to be genuinely engaged about whatever you are talking about. Pretending like you care about art while you don't is creepy and manipulative. Women emotionally connect with men when the guy actually enjoys the subject matter of the conversation.
2) You probably did not speak to her long enough to actually establish a connection. She will probably not answer your call/text. You need to have at least a 20+ minute conversation usually to reduce flaking.
3) You probably came off needy and over-eager, which is why she scurried off.

You missed on two things but that still leaves you with a solid A- for your entire effort.
First, you should have integrated your desire to have a reason to approach her but absolutely not “I’m not actually interested in your work that I just faked interest in”. You are VERY fortunate you didn’t blow it right there. A lot of people get bent by feeling insulted or fooled.
Second with the number I ALWAYS make sure I am not wearing my glasses then I play that I misplaced them and hand them my phone with the add contacts open and ready and ask them to please put theirs in my phone. Then I immediately jokingly say “ok let’s make sure” and call them. Then I’ll say “ok that’s me so add Wilgo to that number so you remember”. That way there isn’t any opportunity for a fake number and you have control of initiation of contact at YOUR discretion/timing. If it is a fake, well then you didn’t waste any time.

Turning a natural flowing conversation about an obvious subject of interest (its her job and you are in an obviously intellectual environment) is really advanced level stuff so he’s doing great. OP is correct in that there is a difference in interaction between “crap I have to talk to this creeper” and “wow this cute guy is chatting me up even though I’m in work dress/mode and I’m into it”. And honestly today the taking the number would absolutely be a pint where she could go to her boss and request help because she is being harassed so I see that as a sign of genuine interest and not at all something that would be considered “required” by an employer.

I can tell you personally the pet peeve I have is the old hit on the waitress or barmaid/bartender thing. I can assure you having a sister and many friends over the years who did this work that even if you are a rich gorgeous dude it is NOT appreciated at all. They generally get in trouble because they are ignoring other customers for you to flirt and hold their attention. They have it happen literally every hour, every shift for their entire work time. It gets very old - especially since most of the guys doing it are 1) Drunk and 2) 98% nasty in whatever way.
That being said, the fact is that the OP was in is a quite different environment and much more conducive to a personal level of interaction and engagement. I have had a number of successful situations like that (and I’m really not big at all about hitting on women in their work environment) when the environment was right.
I would consider an intellectual setting (museum, University theme events, art exhibits, trade shows) to be very much the correct environments for approach to be ok with a woman who is working. They also have an easy option to shunt your back to “work” level interaction without offending.
I would also include any sort of personal service or sales where there is a one on one personal interaction already initiated and accepted.
No no situations? As above any sort of service staff in a busy or used up environment of a bar or restaurant (UNLESS they approach you - the only successful scenario I have had), at the market whether worker or customer (this just always seems like a huge fail whenever I hear about it but guys seem to think otherwise), the gym - also either employee or customer (unless you are an Adonis this is almost always a guaranteed fail AND marked as a creep).

I just cold approached a women working in the museum. She was reading one of the exhibits and looked very relaxed so I figured I had some time to make a move....
You had observed relevant information that gave you more than enough to go on in starting a conversation.

But insecurity is an asshole in the back of all of our minds. And even though you had more than enough to start a conversation, you were second-guessing yourself before you even went in.

This was a good start.
But it doesn't seem like the conversation was really personalized in any way towards her. Dealing with the public in the museum is part of her job description so this part didn't really have a lot of meat to it.
While talking to her about the museum was a great way to start, finding some way to talk about how she feels about working at the museum or asking her what made her want to work there, would have been more meaningful.

You had a good start to the conversation but doing this pulled the rug out from under everything. You basically invalidated everything you've been talking with her about which had been the basis of whatever connection you managed to make.
Plus there's really no way she can respond to what you had brought up. So you killed the conversation. The most she can say is maybe thank you or something like that. Which is a compulsory answer and it's awkward because it's compulsory.
And any woman who has to deal with the public as part of their job will not react negatively if they can help it. They will do what they can to come off polite and avoid conflict in public. So it's pretty difficult to say whether she was actually flattered or not. Given that she scurried off later, it's likely that you made her uncomfortable rather than flattered.

Then I asked if she wanted to get a coffee. She seemed somewhat open to the idea and suggested I give her my phone number, obviously your boy obliged.
So you never got to any meat in the conversation. You didn't really connect or establish comfort by getting to know her even a little? If you did you didn't mention it.
Then you blew up what conversation you managed to have with her.
In the future, starting off with small talk like what you did is good, even necessary, but you must transition to following up on things that she's saying with an eye towards getting at her emotions (how she feels about something) and motivations (why she did something). This is the basis of connecting and building comfort which are essential parts of the process here.

Side note: It should never be just one person or the other getting a phone number. Both people should be getting each other's numbers.

Overall I would say if she was an employee of the museum, then you ought to have made some of the conversation to be asking her what it's like working there.
To just walk up to her and essentially ask her to do her job, only to then say not just kidding let's get coffee, is pretty awkward.
And after all that, if all you did was give her your number, then you should just consider this a learning experience and try to better next time because she's not likely to call you.
