Never really understood the reason behind this

I don't think you're giving yourself enough credit here. You can understand the concepts of play here.

1.) Popularity and awareness

You understand the concept of something being popular and how that can Make other people aware of something, piquing their interests.

That's the basic idea we're talking about here. It's basic advertising.

When a girl likes a guy, she's more likely to talk about him with her friends, making them aware of him if they weren't already.

When people are aware of something, not everyone will like it, but it increases the chances that someone who already had a predisposition to liking that thing, will become aware of it and develop a liking to it.

It's not magic. Girls liking a guy doesn't magically make every girl like that guy.

2.) Scarcity

If we know that other people want a thing and we think that thing could become scarce, people rush to get that thing and compete with each other.

It's human nature.

3.) Competitiveness

Many people define who they are, in part, by their ability to strive and get something against odds.

If other people like a guy, then the odds just went up and the victory one would achieve by getting that guy, increases in value.

4.) Actual compatibility?

The problem with all these things is that pursuing a dating interaction or relationship based on them can lead to unsatisfying results.

It's super common for people to be so consumed with the competitiveness of it all, I was driving to get to someone, that they were paying no attention to the fact that they might be incompatible.

The appeal of having won someone over wears off really damn quickly when one realizes they don't get along.

Not that knowing this changes human nature.

the same reason people buy name brand products. If you're in a position to select an option with limited info at hand, you will almost always choose the one that other people at least seem to like, even if you dont know why.

the entire industry of marketing/advertising is based on this principle.

Because they like a challenge, they know a guy that’s wanted by many women is clearly good with women and knows how to handle them so they want a piece as well. This is why you see hundreds of thousands of women run and chase after hot guys. It’s all they desire, plus bragging rights for being the one to land him. Women also hate it (once they’re with him) because now her position isn’t secured and has to stay on her toes which is why they try to control and manipulate those guys by getting pregnant or marriage. For the same reason any in demand experience or product generates interest, especially if it appeals to others in your specific demographic. I tend to avoid because that person might get a big ego about having so much interest. But it generates curiosity that's for sure. Doesn't even need to be special, think about product offerings like iPhones, a lot of people will argue there are better options out there but something just being popular, the popularity is value in and of itself since it becomes a form of social power.

It is a definitive sign that they have something attractive to offer may not be what I want per se, but that person has gained some kind of seal of approval even if it's arbitrary. There are companies that do this too, market something as a status symbol, people desire it and obtain it, others follow suit and it becomes a phenomenon but it's just a fuckin t-shirt. Boom, Pete Davidson effect. The perceived value of the people seeking the person/object adds to their perceived value. Idk seems like stock over-valuation effect to me.
