Keep it simple, humorous, and vague.

"I do math on big rocks to prevent Bad Shit From Happening" where you sarcastically emphasize the last part. If that somehow piques their interest you have an easy and fun topic ahead, if not they laugh and you move on

I'm a water engineer, I do pipelines, treatment plants, etc. I'm a Project Manager and design lead, I end up overseeing the all the different disciplines, doing the management and invoicing, project finances, etc. It's not real exciting unless something breaks or doesn't work like it's supposed to after it's built (ie - something goes wrong).

When asked what I do - I paraphrase all that by saying "I make smart people with poor social skills talk to each other." I don't focus on the technical part of the job to answer that question, I focus on the people, connecting with them, and what I do to make them connect with each other. And I focus on the fact that I'm in charge of them, I'm da' boss. I'm the guy in the position of power at work.

Figure out how to describe the people part of your job to a woman. She doesn't care about the technical stuff but she will care about the aspect of your job that deals with relating to other people, where you fit in the hierarchy, and if you're climbing up that hierarchy.

Incidentally, your technical work needs to correct, but when you focus your work effort on the job more on the aspects of relating and connecting with people, and using that to improve collaboration and work yourself into leadership roles in your tasks, you'll find yourself getting bigger raises, promotions, etc. So learning to do it will benefit you both out of the office and in your career.

You don’t need to. Women don’t give a fuck what you do. My wife barely knows what I do and neither do 99% of the other employees at my company. Just tell them you work with software development because they won’t understand it if you go any deeper.

Tectonic plates...can't you come up with some creative line about studying earthquakes, or whatever? You need to take what you do and put it into terms that the average Joe on the street can understand. Try to make it sound fun and interesting, even if it isn't.

I do a lot of statistics and risk analysis in my job. I sit in a cubicle all day and it's boring as hell. But since 99% of the world doesn't understand what I do, I can easily fill in the gap with bullshit that makes it sound a lot more exciting. Girls ask me what I do. I say, "Do you know what an X does?" When she says no, I move the conversation into a classic statistics mind game like the Monty Hall problem. I get them to 'play the game,' then explain to them why they made the wrong choice. Gets her intrigued and allows me to display mastery.

At the end of the day, no one really wants to talk about work unless you have a lot of genuinely cool stories. Talk about it briefly then move on to a topic that won't dry up her panties.

Just keep it short and sweet. I usually blow out my standard 2 sentence description of what I do followed up with something along the lines of:

"But I talk enough about work at work.... insert segue into other topic"

Sounds like a fancy way to say "I help detect earthquakes". Describe your job like you would to a first grader basically. And you don't have to be 100% accurate.

My time to shine.

Firstly, if you think STEM is boring, why are you in it? If you're not excited to knock it out of the park every day, you shouldn't be in this line of work.

Secondly, while you're right that it does attract lots of beta male providers and people actually on the spectrum, that doesn't mean that you can't be a leader with strong frame, nor an interesting guy. Plenty of non-basic women do count STEM careers as optimal for potential mates. Sure, some of that comes from the high earning potential, but also because its easy to show that you're making a difference in this world... and in ways that other careers simply cannot.

Talk passionately about your career. Show them what you find so interesting about it. Show them the things you invented that no other human on planet earth ever conceived of. I have first-hand knowledge that this does sploosh panties. Of course, quite a few women are so basic that they can't appreciate it, but you should be weeding them out long before you get to a date.

The old "ignore biches, acquire knowledge" meme hits the nail on the head as long as you're not an autistic loser. Get better at filtering out the retards, and your STEM career will attract a lot of high-quality women.
