Hypergamy is an outright personal thing. There is no meaning when people say 'women date up'. Like, what does that even mean? In reality, it means that the woman perceives the man to be better than her. That's what it means to 'date up'. So when people claim 'women only date up', how can you possibly know what is going on inside the woman's head? Yes,relationships tend to be more fulfilling when the woman has a good perception of the man, but this has nothing to do with what you think is going on, its rather what she thinks of him.
