Good pie crust recipe?

I found one I like on Pinterest attached to a homemade chicken pot pie recipe. I use that one for pretty much everything. You could use all margarine or all butter, but I usually will use both. A lot of recipes say you have to use ice water or refrigerate the dough or use cold butter, but I’ve found you don’t have to. You can use room temp water and use the dough right away and use room tempt butter.

I’ve cut the butter in by hand with a fork, it’s doable. But a stand mixer is better. It cuts the butter into the dough for you and mixes everything better.

I think the trick is to know what your dough should look like. Not too sticky. Not too dry. You want it to roll out nice.

I've got a great grafted cracker crust one I can give you later when I get home to my recipe book. I use it for my pumpkin pie. It's a bit work intensive though.

Because I don't have much space to roll out a crust I was thrilled to find this recipe you mix and press into the pie plate. It's good enough for me but I'm under no illusion it's actually good.

Yield: 1. 9" pie top or bottom crust or a galette. OR top and bottom for pot pie in 6: pan.
Equipment: 1 bowl, 1 fork. No food processor or butter! Doubles well

Ingredients: 190 grams. AP Flour. (Cake flour as well or a mix?) 1/2 tsp kosher salt. (1 tsp was too much last time) 2 tbl. Sweet Pie: Sugar Savory pie:1 tsp ea garlic and onion powder, black pepper and italian herbs 70 grams. Sweet Pie: neutral oil or complimentary Savory Pie: olive oil or nut oil that compliments 65 grams. Buttermilk. When it gets low add grass fed milk leave on counter for 24 hrs and it replenishes.

Method 1. Whisk salt and flower to get even distribution of salt. 2. With a fork stir buttermilk and oil to emulsify dragging the flour into the center then stirring until flour is incorporated finish with hands GENTLY. 3. Gently fold it three times gently pushing it down. Do not knead! 4. Generously flour surface. Can’t have too much flour. 5. Turn out dough and form fairly consistent circle 6. Re-flour both sides generously 7. Gently roll it out to proper size leaving overlap 8. Use bench scraper to lift dough from surface folding it in half then in a quarter 9. Lift onto pan and unfold 10. Tuck edge underneath all around 11. Use first and second finger of left hand and index finger or right hand pushing between the two fingers of the left hand that has dough on them to make a flute 12. Dock generously with fork prior. 13. Blind bake he didn’t use pie weights 14. Bake 14 minutes at 400 degrees

I got this from Sur la Table last Christmas on a whim and it's wonderful! I place one of the racks above the pie and put an upside down cookie sheet on it to prevent the lattices from burning before the pie is baked through. During the last 10min, brush the lattice tops with egg white and remove the rack on top.

When blackberries are in season, I pick them and make them into pie the same day. I go to apple orchards on apple season and make apple cream pie. I'm trying to learn coconut cream pie, but I don't have much time right now. If you, or anyone else reading, know a recipe for coconut cream pie, I'd love it if you would share.

I have to give a HUGE shout out to my favorite pie making influencer, Erin Mcdowell. She has amazing videos on Youtube and Instagram. She also wrote the book on pie! She has great recipes and have been making pies since she was 12.
