If people make jokes of her man, then he's not respected, thus people think he's' a loser, which means she's dating a loser, and that means she had to settle for a low status loser because she can't do better. If she didn't defend you people would take her silence for agreement, which would mean she is aware of dating a loser but does nothing about it.

Edit: Summing up, if she didn't start defending you, she would be forced to break up with you sooner or later. Your friend group would lose respect towards you and see they can talk shit about you when she's around. That's more than enough to end a relationship from a woman's point of view.

My take is your should probably continue raising your SMV to the point you don't have randoms coming up to you and making jokes about you.

Ive literally never had a guy come up and talk shit to me or about me in general and I go out all the damn time.

The key in these scenarios is the best defense is a good offense, props to your girl for defending you but she shouldn't have too lets be honest. If I sense a guy is entering my group to challenge me or approach the women I am with, I always make eye contact and introduce myself and make basic small talk to feel him out. This communicates to him I am the gate keeper of the group, im nice but not overly nice, and he needs to show me something worthy of being introduced into the rest of the group. Which means he has to enter my frame to get anything, if he fails I give him a little pat on the back and tell him to have a good night and I turn my back, typically make a joking comment about him to the group and we all move on. This either shuts down or deescalates 99% of situations I encounter. But I also give off a vibe that I am not to be fucked with, if you can't channel that kind of energy I suggest you lift, and work on your frame.
