I'd avoid the "Thanks, you too" option. It looks as if you feel obligated to return the favor and it doesn't feel genuine, even if it is. Just a "Thanks, I appreciate it" is enough if you want to return a neutral response while still showing validation.

Other than that, well, it really depends on your personality. You can be funny, cocky, confident, whatever. Just keep your frame.

you could over elaborate their complement. say oh yes I have the sexiest hair, I use only the best product. It's a cross between justin beiber and brad pitt but with my own sexier twist. My barber can barely contain herself when she cuts it. but you can touch it if you want.

A simple thanks is good, you could also make a joke too. Yea you like it, I just got highlights last week, it takes time to look this good. the cocky funny route always worked for me.

I treat compliments like a shit test. She is testing your frame to see if you get all self-conscious as a result, or overly modest, or cocky, or any of the above. You should immediately turn it into a joke and then forget she said it a moment later. Or fall back on agree and amplify, i.e. "yeah i know, i'm turning down movie offers all the time because of my hair".
