You are overthinking. There are countless other variables (random mood swings, interaction with friends, her period), that influence her state. Other than looking at her body language and the situation she is in, you have no way of guessing, how receptive she will be. Even then it's just a guess, that could be totally wrong.

Honestly, I think this level of thought is overthinking it. Are people generally more depressed on Mondays? Sure. But should that stop you if it feels right for you? Absolutely not. You should be going into the interaction with the idea that you're a high value guy who's going to show her a good time. If she happens to be depressed because it's a Monday, lucky for her, she's got you to take her mind off things. If a girl actually wants to go out with you, she'll make the effort, the day won't matter. Assuming she's not legitimately busy, if she's flaking, it's not because of the day. It's because you haven't gotten up to that level yet where she's excited to go out with you, take it back a notch, work a little game and warm her up to it and then re-try.

As an over thinker myself, this is next level.

I don’t remember the exact scientific terminology/name behind this, but essentially it’s the same as zodiac signs meaning something and similar to when gamblers try to justify their luck because they did insert action that has no impact on the outcome, and every time they “were right” they attribute the outcome to that action, but ignore every loss that happened when they did that same action.
