Depending on your state you don't even need proof. But as a man getting one on a woman they may dismiss it because of sexist beliefs.

In my state, because it happened to me, all she needed was to say over the phone I was crazy and she was scared and they issued it.

Don’t lie. Get a lawyer - if they don’t think it will hold up, get her to agree to some no contact in exchange for dropping it. Did you file for divorce yet? If not get on it. Unless her behavior gets worse, this is probably the high water mark for your leverage.
