You don't need to do anything fancy, slick, or smooth.

Option 1: take the compliment, say thank you, change the subject, move forward.

Option 2: something cocky like "you don't know me well enough to be saying that," join her as she laughs, change the subject, move forward.

Fuck the self-deprecating bullshit. Being smart is a great quality, and any girl who is worth your time should know well enough that a guy can be smart and attractive. Take yourself for example! Now focus on making her next compliment be about how attractive you are!

Bonus: compliment her on her taste in men later on, when she's digging you! :D

"Eh, the more I learn, the less I know." You could even segue into a brief conversation about the different types of intelligence and maybe even point out one of your weaknesses. It may seem like a DLV, but as long as your weakness isn't too out of the ordinary, you're subtly demonstrating humility and self-awareness while simultaneously acknowledging your intelligence. Wins all around.

MY friend unintentionally responded well to something like this. We were at a bar we frequent when the waitress made some comment that he responded to and she asked him how he knew that. He looked at her and said "I'm smart." Then flashed a big, goofy, but self assured grin. it was actually kinda charming and pretty funny. We all had a laugh.
